BANANA TOFFEE

BANANA TOFFEE

Ingredients
  • Medium sized banana - 2
  • Plain flour(maida) - 4 tbsp
  • Corn flour - 1 tbsp + 1tbsp
  • Baking powder - 1/2 tsp
  • A pinch of Salt
  • Sugar - 1 cup
  • Oil for deep frying
  • Sesame seeds (for garnishing)
  • A large bowl of iced water

Method

In a large bowl prepare a batter by mixing plain flour, corn flour, baking powder, 1 tsp oil and salt with water. Cut the banana into pieces of 2 inch and add 1tbsp of corn flour to it. Make sure that all the banana pieces are coated with corn flour. In  a frying pan heat oil. Dip the pieces of banana into the batter and put them in oil for deep frying. Once they turn golden brown remove them from oil and place them on a tissue to take out excess oil. In another pan add sugar and heat it, continuously stirring it until it caramelizes. Dip each piece   of fried banana in the caramel and put it into iced water immediately to cool it off. Keep the pieces in iced water for about one minute so that the crispy shell is formed. Now take them out of water into a bowl and garnish with sesame seeds.

So crunchy from outside and soft from inside the Banana Toffee is ready.
